Dijon-Chive Spiralized Potatoes

Serves: 3
  • For the potatoes:
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 pound red potatoes, Blade D, noodles trimmed
  • salt and pepper, to taste
  • For the dressing:
  • ½ tablespoon country dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons chopped chives
  • 1 teaspoon apple cider vinegar
  • salt and pepper, to taste
  1. Place the olive oil into a large skillet and once heated, add in the potato noodles and season with garlic powder, salt and pepper. Cook for 10 minutes, tossing frequently, or until potato noodles cook through.
  2. Meanwhile, whisk together the ingredients for the dressing into a small bowl. Set aside.
  3. When potatoes are done, place into a large mixing bowl and pour over the dressing and toss thoroughly to combine. Serve immediately or refrigerate to chill.
